I cut these because a few people in the past have asked for them. I typically blew them off because, in my stubbornness, believed that every chop should have a bone in it and be at least an inch thick.
Well folks, I've been converted. I call these "breakfast chops" because they pan sear to perfect doneness in no time flat. I've done them on a hot grill with nothing but salt and pepper with amazing results. Even this old dog can learn some new tricks!
