Purely Grass Fed Beef Suet for Tallow

Ground from pure leaf fat surrounding the kidneys. Kidney (leaf) fat is the most pure form of of fat in beef and is the most nutrient dense.  We grind it for easy rendering.

Perfect for cooking, sautéing or making your own tallow lotion. 

Tallow provides key vitamins A, D & K and allows the body to absorb the fat soluble vitamins in the foods we consume. We enjoy using tallow to sauté veggies, eggs or just about anything you want to add extra  nutrients. 

HOW TO RENDER 

For TALLOW for cooking - render and strain 1-2 times is recommended.

For TALLOW for hand salve or skin care - render and strain 3+ times, then whip with an immersion blender!

Our Process

  1. We start with a package of our Purely grass fed Beef suet and render it in a large cast-iron pot for about 8+ hours.
  2. Place the suet fat into a large heavy bottom pot or slow cooker and get it over very low heat. A slow cooker takes a little longer but uses such low heat that it is very unlikely that you will overheat the suet. You can also render in a 200 degree, or lower. oven  (If too high of heat is used, the tallow may have more of a toasted/cooked flavor and the tallow could darken in color- which is what you do NOT want). 
  3. Slowly simmer the suet, allow it to liquefy. Don’t allow it to hard boil, just a slow simmer. Once most of the fat has rendered into a yellowish liquid separated from the meaty pieces, take the pot from the heat and strain through a fine mesh.
  4. Let it cool on counter or in fridge, remove fat disk and scrape the bits from the bottom of the disk.
  5. Render the fat again for about 4 hours.
  6. Let it cool again, remove fat disk and scrape the bits from the bottom of the pot.
  7. Render the fat again for about 4 hours and Let it cool again, remove fat disk and scrape the bits from the bottom of the pot.
  8. Melt everything in a large pot and add in jojoba oil (4:1 tallow to oil ratio) and then add in your favorite essential oil (we love lavender and rosemary!)
  9. Let it cool, and then whip with beaters while it is mostly solid (our favorite part!)
  10. Add it to the jar and label!
