This is 100% leaf fat surrounding the kidneys. Kidney (leaf) fat is the cleanest, most pure form of of fat in beef and is the most nutrient dense.  We grind our suet in our large meat grinders to make it easier for rendering.  

***UPS Home Delivery: Because of the bulk and lower cost of this item.  We may need to bill up to $20 to cover the cost of shipping if the order is primarily suet.
