The smallest muscle cut from the chuck shoulder. Lean and tender, almost identical to a tenderloin filet in shape and flavor - but smaller and budget friendly. 

Preparation: 

  1. Steak seasoning both sides
  2. Rest at room temperature 1-2hrs
  3. Brush with avocado oil or olive oil before grilling
  4. Grill high heat - turning every 2min to 135 degrees internal
