Pork jowl is an old-time favorite of homesteaders, but it's rarely seen in stores. We absolutely love it around here for it's sweeter flavor and higher fat content than regular bacon from the pork belly. Although we know a lot of folks who cook it and eat it just like the regular bacon, we do not recommend it. It is best used to bring flavor and pan seasoning (cooking fat) to another dish. We chop it up and use it as a base to pan-fry veggies like green beans, onions, spinach, kale, chard and more. It can be chopped and pan-fried as a base for many dishes. If you choose to eat it like a slice of bacon, be prepared for a low yield and a lot of rendered (amazing tasting) fat in the pan.
