Bacon Cheeseburger Mini Meat Loaves

I never really liked meatloaf much, but I've discovered that I can make it taste amazing. The best part is that it's not that hard to make. With this recipe, I wanted to solve three problems: 1.) It has to taste great, but also be good for us 2.) I needs to be easy to make because I'm extremely busy, and 3.) I want leftovers to be just as good, if not better than the day I made it.

Ingredients
- (1lb) Ground Beef
- (6 slices) Beef Bacon
- (1 large) For REAL Free Range Eggs
- (2 cups) White Wheat Sourdough Bread
- (2 tablespoons) Mayonnaise
- (3/4 cup minced) Onion
- (1 tablespoon) Mustard
- (2 teaspoons) Salt
- (1/4 teaspoon) Black Pepper
- (8 oz) Shredded Cheddar Cheese
Directions
- Preheat oven to 350 °F
- Mince beef bacon and pan fry until barely crispy. Drain very well. Pat with paper towels.
- To make the soft sourdough breadcrumbs, cut crust off of 3-4 thick slices of sourdough. Rub the bread between your fingers to create small breadcrumbs. Lightly pack in measuring cups.
- In a large bowl, combine the ground beef with all the other ingredients, mixing well.
- Lightly Press meat mixture into a muffin pan. Careful not to pack too hard
- Bake 20 minutes, or until the internal temperature of the meat is 165 degrees
